chocolate sheet cake & chocolate icing

CAKE:

2 c. flour
2 c. sugar
1/2 tsp. salt
1/2 c. butter (1 stick)
1/2 c. vegetable oil
4 T. unsweetened cocoa powder
1 c. water
1/2 c. buttermilk
1 tsp. baking soda
1 tsp. pure vanilla extract
2 large eggs

In a medium bowl, add the flour and sugar. Whisk together and set aside.

In a large saucepan, add the butter, oil, cocoa and water. Whisk until blended. Bring just to a boil over medium heat, stirring constantly, until butter melts and mixture consistency is smooth. Pour over flour mixture and blend with mixer. In another bowl, combine the buttermilk, baking soda, vanilla and eggs and mix; add to chocolate mixture. 

In a greased and floured 9x13" pan, pour cake batter into pan and bake for 30 minutes at 350 degrees, or until toothpick inserted in center comes out clean. 

 

ICING:

1/2 c. butter (1 stick)
4 T. unsweetened cocoa powder
6 T. milk
1 (16 oz.) package confectioner's sugar
1 tsp. pure vanilla extract

In a large saucepan, add butter, cocoa and milk. Bring just to a boil over medium heat. Remove from heat ; add vanilla and confectioner's sugar. Blend with mixer. 

When cake is done, poke holes on the top using fork. Pour icing over top of the hot cake. Serve from pan.
